mixed vegetable curry

rasa korma

50g freshly grated or desiccated coconut 50g cashew nuts

6 tbsp vegetable oil

1 tsp mustard seeds

1 onion finely chopped

5 green chillies finely chopped

10 curry leaves

25mmm cube of fresh ginger peeled and finely chopped

1 tsp turmeric

1 tsp chilli powder

1 tsp tomato puree

1 green bell pepper cubed

1 red bell pepper cubed

100g carrots cubed

100g potatoes cubed

50g peas

Blend the coconut cashew nuts and 570ml water into a smooth paste in a food processor.

Heat the oil in a large pan and add the mustard seeds.

As they begin to pop add the onions green chillies curry leaves and ginger. Saute for 10 minutes until the onion is brown.

Add the turmeric chilli powder and tomato puree.

Mix well and cook over a low heat for 5 minutes.

Stir in the coconut and cashew nut paste and add 1.2 litres of water.

Bring to the boil then add all of the vegetables and cook for 10 minutes or until the vegetables are tender.

Lower. the heat cover the pan and cook for a further 5 minutes.

Serve hot.
