mustard sauce


40g butter

1 onion thinly sliced

2 garlic cloves finely chopped

1 sprig fresh thyme

1 small bay leaf

10 white peppercorns crushed

200ml dry white wine

200ml demi glace (qv)

1 tbspn english mustard

2 tbspn dijon mustard

500ml double cream


squeeze lemon juice

1 tbspn coarse ground mustard

Melt the butter in a heavy saucepan.

Add the onion garlic thyme bay leaf and peppercorns.

Cook until the onion is soft but not coloured.

Add the wine and reduce to about 1 tablespoon.

Add the demiglace and reduce by half.

Add the English and Dijon mustards and the cream.

Bring to the boil then season with salt and a lirde lemon juice.

Pass through muslin or sieve.

Just before serving stir in the coarsegraln mustard and check the seasoning.

Serves 4
