orange water ice

Granita di Arancia

25og granulated sugar

600ml water

300ml unsweetened orange juice

2 tablespoons lemon juice

1 teaspoonfinely grated orange rind

Place the sugar and water in a pan over moderate heat and stir until dissolved.

Bring to the boil and boil for 5 minutes.

Cool to room temperature then stir in the fruit juices and orange rind.

Pour into a shallow freezerproof tray.

Freeze to a snowy granular texture stirring every 30 minutes.

Spoon into 4 tall glasses and serve immediately with a straw or spoon.

Serves 4

Note: If the ice freezes solid transfer to the refrigerator to soften until it can be mashed with a fork.
