oriental noodle salad

1/2 packet of glass noodles

1/2 packet of Chinese egg noodles

1 bunch of spring onions

1 red onion

1 red

1 yellow pepper

1 piece of bamboo shoot

6 shitake mushrooms washed thinly sliced

1 carrot peeled and julienned

1 packet of cherry tomatoes halved

1 packet of bean sprouts

1 packet of tofu

1 tbsp vegetable oil

12 coriander sprigs washed


2 tbsp mushroom soy sauce

2 tbsp soy sauce

2 tbsp sesame oil

1 tsp sambal orlek (hot chilli paste)

1 tbsp fish sauce

1 tbspn fresh lime juice

2 tbsp lime cordial

Bring 2 litres of salted water to the boil.

Pour 1 litre onto the glass noodles cover and leave to stand for 6 minutes.

Put the egg noodles into the remaining boiling water and simmer for about 5 minutes (or according to the packet) then plunge both noodles into cold running water to cool.

Drain and set aside.

Cut the spring onion red onion peppers and bamboo shoot into thin slices.

Mix these with the mushrooms carrot tomatoes and bean sprouts.

For the dressing mix everything together adding extra chilli paste to taste.

Cut the tofu into 1.5 cm cubes.

Heat the vegetable oil add the tofu and stir constantly until slightly coloured.

Add 2 tbsp of the dressing and cook for a further 30 seconds.

Tip onto a plate and refrigerate.

Pour the remaining dressing over the noodles and vegetables and toss everything together.

Arrange in 4 serving bowls.

Place the tofu on each plate next to the bowl and gamish with the coriander sprigs.
