pakoras
100g flour
lemon juice
1/2tspn salt
large spanish onionfinely sliced
sprinkling of fresh coriander leaves
spices:
1/2 tsp turmeric
1 tspn ground cumin powder
1 tspn garlic powder
1 tspn garam masala
1 tspn roasted white cumin seeds
1 tspn chilli powder (optional)
Mix the flour lemon juice salt and spices with enough water to obtain a paste which just drops off the spoon.
Leave it to stand for 10 minutes.
Preheat your deep frier to 190C/375F.
Add the onion and coriander leaf to the paste mix in well retaining stiff consistency.
Take a quarter of the mix on a tablespoon and ease it into the deep frier.
Add the other three.
The blobs will sink but after a minute or so they will float.
Let them fry for 5 to 8 minutes then turn them over and continue.
After a further 4 minutes or so they should be a deep golden colour and cooked right through. Remove from the oil shake off excess.
Sprinkle garam masala and salt over finished pakoras.
Serve at once although they can be reheated in an oven or frozen.
Tasty fritters.
