1 round flat loaf or baguette
100ml fruity extra virgin olive oil
2 cloves of young mild garlic peeled and crushed
3 large tomatoes (not beefsteak) thinly sliced
1 medium sized red onion peeled and tlinly sliced
2 bottled red peppers rinsed and cut into thin strips
10 anchovy fillets
200g can of tuna
Slice the bread in half horizontally.
Spoon the oil over the cut sides and grind over a littb black pepper.
Spread with the thoroughly crushed garlic.
Arrange the tomatoes onion peppers anchovies and lumps of the tuna on the bottom half. Sandwich on the top half and wrap in foil or a dean cloth.
Place a weight such as a bread board on top and leave for at least two hours.
Cut into slices or wedges.
Enough for 2
