panzanella
6oz slightly stale country bread toasted and cubed
l lb ripe tomatoes coarsely chopped
1/2 red onion thinly sliced
1/2 cucumber peeled seeded and cubed
2 ribs celery heart cut into small cubes
handful offresh basil leaves
2 garlic cloves finely chopped (optional)
12 black olives halved
6 anchovies in oil chopped
I tbsp small capers rinsed
2 tbsp red wine vinegar
34 tbsp extravirgin olive oil
sea salt and ground black
pepper
Place the bread in a large bowl.
Add tomatoes onion cucumber celery basil garlic olives anchovies and capers and toss to combine.
Sprinkle with vinegar oil salt and pepper.
Spoon the olive oil over the salad and toss again.
Set aside for 20 minutes to allow bread to absorb dressing and flavours to blend.
If the bread is too dry sprinkle with a little chilled mineral water.
