This is our simple version using puff pastry triangles to make the pyramid instead of praline. The pastry triangles are arranged points up to make a foursided pyramid. The cavity inside is filled with a hazelnut and coffee cream.

For the pyramid

2x13oz pkt frozen puff pastry defrosted

I egg beaten

300ml double cream whipped

25g hazelnuts finely chopped

1 tbsp coffee essence

1 tbsp caster sugar

2 tbsp plain chocolate grated whole hazelnuts

orange segments for decoration

For the passion fruit sauce

300ml passionfruit juice

1 tsp arrowroot

1 tbsp brandy

Roll out pastry thinly on a lightly floured board. Cut into 16 triangles with 7.5cm sides. Chill for

30min. Brush with egg. Bake at Gas 6 400
