4 x 500g ovenready pigeons

Salt and pepper

Oil a little for frying

100ml clear honey

Boudin blanc (qv)

300g potato puree (qv)

50g cream of garlic (qv)

200ml port

300ml demi glace 300ml (qv)

1 sprig fresh thyme

clove garlic

about 40 redcurrants fresh or frozcn

4 roast garlic cloves (qv)

8 apple poached

Season the pigeons with salt and pepper and fry them in some of the oil until evenly coloured on all sides

Place them in dhe oven preheated to 230
