poached pears
4 mediumsized pears
Juice of l/2 lemon
1 vanilla pod split lengthways
2 strips of lemon zest
300 ml water
170g caster sugar
Peel and core the pears then cut into eighths.
Turn them in the lemon juice as you work to prevent them browning.
Put all the remaining ingredients into a saucepan and stir over a medium heat until the sugar has completely dissolved.
Add the pear slices and enough water to barely cover.
Bring up to the boil then reduce heat andleave to poach gently for 2030 minutes turning the slices carefully every now and then.
The pear is done when it is translucent tender and lightly flushed with russet pink.
Garefully lift out the slices with a slotted spoon and lay them in a serving dish.
Boil down the liquid until it is reduced to a syrupy consistency then pour it over the pears and leave to cool.
Serve with ice cream cr
