potato scones

l lb boiled potatoes peeled

salt

2oz porridge oats

2oz plain flour

unsalted butter

honey or maple syrup

blackberries

Mash the potatoes making sure there are no lumps.

Season with salt.

Add the oats and then fold in as much flour as the potato will take without becoming

too dry.

Roll this “dough” out thinly and cut into triangles or circles.

Prick with a fork.

Panfry with a little butter until golden turning once.

Serve hot with butter honey or maple syrup and a few berries.

Serves 4
