570g boiling potatoes (Marls Piper Desiree)

4 cloves of garlic peeled

salt and freshly ground black pepper 55g butter

150g cheese (two varieties see below) grated nutmeg to taste

3 good handfuls of watercress large stalks removed

455g pasta (qv special recipe pasta)

extra olive oil or butter

Wash and peel the potatoes put them into very salted boiling water with the garlic and cook until the potatoes are just tender (it is very important not to under or overcook them).
