1/2 cup pecans or walnuts coarsely chopped 1 small red cabbage shredded

1 red or white onion thinly sliced

6 ounces fresh dates pitted and coarsely chopped

1 large red apple cubed

5 ounces swiss cheese crumbled or cubed

salt and pepper

Sweet mustard dressing:

3 tablespoons olive oil

2 tablespoons wholegrain mustard

1 tablespoon clear honey

1teaspoon white wine vinegar or lemon juice salt and pepper

Place the pecans or walnuts on a cookie sheet and toast under a preheated hot broiler for 2 to3 minutes until browned.

Set aside.

Beat together alfthe ingredients for the dressing in a small bowl and beat until thoroughly blended.

Alternatively place all the ingredients in a screwtop jar and shake vigorously to combine well before using.

Place the cabbage in a large salad bowl with the onion dates and apple.

Season with salt and pepper to taste and toss lightly.

Add the cheese to the salad and sprinkle over the reserved nuts.

Pour the dressing over the salad and serve immediately.
