red cabbage with apples

0.9kg red cabbage

1 tablespoon oil

30g butter or margarine

1 medium onion sliced

170g Granny Smith apples unpeeled cored and chopped

The grated rind of half an orange

2 tablespoons muscovado sugar

1/4 teaspoon each of ground cinnamon and nutmeg

1/4 teaspoon each of salt and pepper

85 ml red wine vinegar

85 ml stock or water

Finely shred the cabbage (this can be done in a processor).

Melt the oil and butter in a large pan or flameproof casserole.

Cook the onion until soft and golden.

Add the cabbage and Stir fry for 2 minutes.

Add the rest of the ingredients and stir well.

Cover tightly and simmer gently for 1 to 11/2 hours stirring occasionally.

Taste and adjust the seasoning.

Serve hot.

The cabbage is also excellent reheated.

serves 4

Note: the cabbage can also be cooked in the oven at Gas Mark 4 350 F 180 C
