red wine braised portobello mushrooms with thyme polenta

8 portobello mushrooms

olive oil for frying

2 carrots peeled and finely chopped

2 sticks celery finely chopped

1 large onion peeled and finely chopped

3 cloves garlic peeled and finely chopped

salt and black pepper

3 bay leaves

60g butter

2 tbsp sherry or redwine vinegar

1 glass madeira or port

2 tsp tomato puree

1 tbsp worcestershire sauce

400m1 red wine

15g dried porcini (ceps) soaked in a cup of water until soft

500m1 chicken or vegetable stock

250g instant polenta

4 sprigs thyme leaves only

50g parmesan freshly grated
