25g butter
2 boneless chicken breasts
300g frozen shrimps thawed
2 celery hearts thinly sliced
1 small honeydew melon
Dressing
4 tablespoons mayonnaise
2 tablespoons double cream
1 teaspoon Tabasco sauce
Melt the butter in a frying pan and fry the chicken breasts on both sides about 10 minutes.
Take them out of the pan and allow to cool.
Cut into thin strips and place in a bowl.
Reserve 8 shrimps for the garnish.
Add the rest to the pieces of chicken.
Add the celery and mix well together.
Cut a lid off the melon remove the seeds with a tablespoon and scoop out balls of the melon flesh with a melon scoop.
Add them to the salad.
Remove the scraps of melon left inside
the skin of the fruit and fill the melon with the salad.
Mix the mayonnaise with the cream and Tabasco sauce and pour over the salad.
Garnish with the reserved shrimps and serve.
