roasted asparagus with cherry tomatoes black olives and basil

900g fresh asparagus trimmed and peeled if necessary
1 good handful of black olives
20 cherry tomatoes small sweet and ripe 3 tablespoons olive oil
1 clove of garlic finely sliced
1 good handful of fresh basil
salt and freshly ground black pepper small pinch of dried red chilli crumbled
Mix all the ingredients together in a bowl and then place in a hot pan or roasting tray.
Cook in a preheated oven at 225C/425F/gas 7 for about 10 to 12 minutes turning 2 or 3 times.
Serve.
I like to cook the asparagus a little longer than usual for this dish not so that it is overcooked and mushy but so it holds its shape while getting a chance to suck up all the lovely flavours in the tray around it.
I think this recipe is choice. The sweetness of the tomatoes the smokiness of good black olives the fragrance of fresh basil and the freshness of your asparagus make an great combo.
