saffron rice with orange and nuts

175g long grain rice rinsed
2 large pinches of saffron threads crushed
1 orange peeled and cut into thin discs
2 tbspns pine nuts lightly toasted
grated zest and juice of 1 uncoated orange
2 tbspns shelled pistachio nuts lightly toasted and chopped
115g dried apricots coarsely chopped
2 tbspns sulatnas or raisins rinsed
3 tbspns finely chopped fresh mint
salt
for the vinaigrette
2 tbpsns sherry vinegar
3 tbspns hazelnut oil
1 tspn sunflower oil
Bring a saucepan of lightly salted water to the boil add the rice and saffron cover and cook until the rice is tender but still quite firm.
Drain and place the rice in a bowl.
Make the vinaigrette: whisk the vinegar together with the juice from the orange.
Season with salt add the oils and whisk again.
Then pour over the rice while it is still warm.
Add the remaining ingredients and toss together to mix everything properly.
Adjust the seasoning with some more salt if necessary.
Serve at room temperature.
Serves 4
