169g selfraising flour
salt
56gbutter or margarine
mixed herbs
140ml soured cream
Method
1. Bone turkey portions heat oil in a saucepan and fry the meat until golden.
2. Add the onion and celery cook until soft.
3. Stir in the flour and seasoning cook for 2 minutes.
4. Gradually add the stock tomatoes with the juice Tabasco salt and pepper bring to the boil stirring continuously.
5. Add the drained corn and pour mixture into a 1.5 Iitre dish.
6. Place in the oven and cook for 25 35 minutes.
Make scones
7. Sift the flour with a pinch of salt rub in the fat.
8. Stir in lhe mixed herbs and soured cream knead lightly to bind.
9 roll out to l/2in thickness using a 2 1/2in cutter make 12 rounds.
10. Remove dish from oven. Arrange scones in an overlapping circle over the turkey. Replace in oven cook until scones are golden brown.
