250g eel cleaned skinned and boned
2OOg fillets of sole
1OOg frozen scampi thawed
225g canned mussels drained
juice 1 lemon
salt pepper
oil for deep frying
parsley sprigs
1 lemon sliced
1 tomato cut into eighths
Batter
3 eggs
40g flour
3 tablespoons olive oil
salt pepper
1 teaspoon each dried rosemary basil
To make the batter beat the eggs with a wire whisk and gradually add the flour and olive oil.
Add salt pepper rosemary and basil.
Leave to stand for 30 minutes.
Cut the eel into bite sized pieces.
Wash the sole and pat dry with absorbent paper.
Sprinkle all the fish and shellfish with lemon juice.
Season the eel sole and scampi with salt and pepper.
Roll up the fillets of sole and fasten with cocktail sticks.
Dip the fish and shellfish in the batter and fry in hot oil for about 1O minutes.
Drain on absorbent paper and place on a hot dish.
Garnish with parsley lemon and tomato and serve with green sauce (qv).
