4 thin slices of lardo per person

extra virgin olive oil

sea salt

fresh rosemary very finely chopped

Lay the paper thin slices of lardo on a serving plate or wooden board then drizzle lightly with olive oil.

Grind over some black pepper and a very small amount of fine sea salt.

Add the rosemary just a little and leave for half an hour before serving with hot toast or bread.
