spiced aubergine pastries
1 large aubergine weighing about 450g
2 cloves garlic peeled and crushed
5 tbsps olive oil
1 tsp ground cumin
250ml thick yoghurt
2 sheets of filo pastry
2 tsps sesame seeds
1 tbsp chopped mint
Wipe the aubergine and cut into small thin chunks about me size of a pound coin.
Place in a colander and sprinkle with salt.
Leave for at least 20 minutes then rinse quickly and drain.
Crush the garlic cloves with a little salt then stir in the oil cumin a generous seasoning of black pepper and a little salt.
Toss the aubergines in the oil then cook them till soft in a grill pan set under a medium hot grill. Toss them around occasionally so that they cook on both sides.
Leave to cool then put them in a small bowl and add 3 tablespoons of the yoghurt.
Preheat the oven to 200
