1 teaspoon turmeric powder

1 teaspoon chilli powder

4 tablespoons distilled vinegar

600g large raw prawns shelled

5 tablespoons sunflower oil

2 teaspoons nigella seeds

2 teaspoons sliced garlic

4 small dried red chillies deseed

10 curry leaves

Mix the powder spices and salt with the vinegar.

Marinate the prawns in this mixture for 10 minutes.

Heat the oil in a kadai or wok.

Add the nigella garlic red chillies and curry leaves.

Reduce the heat and stir fry for a minute.

Add the prawns stirring continuously until they are completely cooked.

Remove the chillies and curry leaves.

Serve hot with a bland accompaniment like rice or rotis to balance the spicy heat of the prawns.

The prawns can be served as a starter or main course. The nigella gives them an unusual flavour which is relished in the town of Hyderabad from where this dish comes.
