stiffado
1.5kg chuck steak trimmed
1.5kg pickling onions or small shallots skinned
85ml olive oil
3 cloves garlic chopped
150ml red wule
3 tbsp red wine vinegar
2 bay leaves
2 cinnamon sticks
3 tbsp tomato puree
salt and pepper
Cut the meat into large chunks of about 57.5cm (23in).
Heat half the oil in a large wide frying pan and brown the meat in several batches adding more oil if needed.
Transfer to a flameproof casserole.
Brown the onions in the same fat then add them to the casserole.
Tip out excess fat and pour in the wine and vinegar.
Bring up to the boil scraping in all the brown residues on the base of the pan.
Pour over the meat and onions.
Add all the remaining ingredients and enough water to cover.
Bring up to the boil.
Turn the heat down cover and simmer gently for 2 hours until the meat is tender stirring occasionally.
Uncover and raise the heat slightly.
Let it bubble for a further 30 minutes or so stirring from time to time to reduce the sauce down slightly.
Skim fat off the surface then taste and adjust seasonings.
This renowned Greek beef and onion stew is made with red wine and scented with a hint of cinnamon.
