sweet shortcrust pastry

170g plain flour

110g butter or hard margarine

1 tablespoon caster sugar

1 egg yolk

Sift the flour into a mixing bowl.

Add the butter and cut into small pieces with a knife then rub into the flour with the tips of the fingers.

Stir in the sugar.

Mix the egg yolk with 1 tablespoon cold water and stir in using a roundbladed knife to make a firm but not sticky doughf adding a little more water as necessary.

Wrap and chill for 20 minutes before using.
