tart pastry
100g butter
225g plain tour
2 egg yolks
Rub the butter into the flour with your fingertips.
It should resemble coarse breadcrurnbs.
Drop in the egg yolks and mix into the pastry with a couple of tablespoons of cold water.
Bring the dough together with your hands to form a ball.
The dough should not be wet but should come cleanly from the bowl.
Wrap the pastry in greaseproof paper or a clean tea towel and refrigerate until needed.
If you are using the pastry straightaway then roll it out the pastry board or work surface dusted with flour to stop it sticking.
Line the tart tin with it being sure to push the dough well into the corners of the tin.
Chill well be before baking.
A rich shortcrust pastry suitable for savoury or sweet tarts.
Plenty for a 25cm tart tin.
