tomato and anchovy toast
1 spring onion very finely chopped
1 tbsp wine vinegar
4 tbsps olive oil
4 tomatoes
2 thick slices of crusty bread
1 clove of garlic peeled
6 anchovy fillets
Put the chopped spring onion in a bowl with the vinegar.
Stir in half the olive oil.
Season with salt and black pepper and set aside.
Slice the tomatoes into thick pieces drizzle with oil and grill them under a pre heated grill.
Toast the bread on both sides till golden cut the garlic in half and rub the cut side over the toast you just want a waft of garlic not a mouthful.
Pour over the remaining olive oil.
Place the grilled tomato slices on the rounds of toast crush them slightly with a fork and put the anchovy fillets on top.
Drizzle over the onion dressing and eat while still hot.
Serves 2 as a snack
