tomato and pine nut dressing
2 tablespoons balsamic vinegar
2 garlic cloves minced
1/2 pound tomatoes skinned seeded and chopped
5 tablespoons olive oil
1/2 cup pine nuts toasted
sea salt flakes and freshly ground black pepper
Put the vinegar garlic chopped tomatoes and 5 tablespoons of the olive oil in a small bowl. Lightly season with the salt and pepper and mix well to combine.
Alternatively place the ingredients in a screwtop jar and shake vigorously to combine well before using.
Just before serving add the toasted pine nuts to the dressing.
Grilled asparagus sprinkled with slivers of Parmesan cheese is a perfect dish for this dressing. Serve as an appetizer with plenty of warm bread to mop up any extra dressing
