tomato coulis
900g tomatoes skinned and sliced with seeds removed
2 tablespoons olive oil
2 medium onions thinly sliced
For the vinaigrette dressing
1 tablespoon wine vinegar
1/2 teaspoon mustard powder
1/2 teaspoon salt
1 clove of garlic crushed
3 tablespoons olive oil
Freshly milled black pepper
Heat the 2 tablespoons of olive oil in a pan then gently sweat the onions till just soft. Add the prepared tomatoes and gently stir them around over a low heat until they soften a little.
They mustnt start to go mushy 5 minutes cooking is about all they need. Now pour them into a shallow serving dish and make up the dressing (simply place all the ingredients in a screwtop jar and shake it vigorously to amalgamate everything). Sprinkle it over the tomatoes leave to cool and chill till needed.
