5 large tomatoes
1 medium yellow onion finely chopped
parsley
dressing:
1 tablespoon red wine vinegar
1/2 teaspoon salt
white pepper
2 teaspoons chervil
4 tablespoons oll
Cut the tomatoes with a sharp knife in very thin slices arrange these in rows on a platter one slice overlapping the other.
Or dip the tomatoes in boiling water and peel before cutting in half then remove the seeds.
Chop the onion finely and sprinkle over the tomatoes.
Beat together the ingredients for the dressing and pour over the salad.
Chill.
Sprinkle with chopped parsley immediately before serving.
Variation:
Add 150g sliced raw mushrooms to the salad. Or add sliced olives
