400ml milk
140gsugar
2 vanilla pods split lengthways
10 egg yolks
5Ogflour
a little icing sugar for dusting
8 egg whites plus a pinch of sugar
40g softened butter
70g sugar
Combine the milk twothirds of the sugar and the vanilla pods in a saucepan and bring to the boil. Put the egg yolks in a bowl with the rest of the sugar and work with a balloon whisk for several minutes. Fold in the flour whisk until the mixture is smooth then pour on the boiling milk whisking continuously. Pour the custard back into the pan set over high heat and boil for 3 minutes whisking all the time. Pour the custard into a bowl sprinkle lightly with icing sugar to prevent a skin and keep in a warm place. Brush the insides of the dishes with butter tip the sugar into one dish and rotate it so that the entire surface is covered with sugar. Tip the sugar into the next dish and repeat the operation until all the dishes are coated with sugar. Preheat the oven to gas 7 220C (425F) and put in a baking sheet. Beat the egg whites in an electric mixer or by hand until halfrisen. Add a pinch of sugar and beat to fairly stiff peaks. Remove the vanilla pods from the cr
