welsh rarebit

caws pobi

280g mature Cheddar cheese grated plus a little for sprinkling

15g butter

1 tablespoon Worcestershire sauce

2 teaspoons mustard

2 teaspoons flour

Pepper to taste

4 to 5 tablespoons Guinness

4 slices of bread toasted on one side only

Sprigs of parsley

Put the cheese butter Worcestershire sauce mustard flour and pepper into a pan.

Mix well then add enough Guinness to moisten (the mixture shouldnt be too wet).

Stir over a low heat until melted.

When it forms a thickish paste take out the spoon and swirl the mixture round the pan.

Spread the mixture over the untoasted side of the bread.

Quickly flash under a hot grill then sprinkle lightly with a little grated cheese and garnish with sprigs of parsley.

Serve immediately.

The basic cheese mixture of this traditional favourite from the Blas ar Gymru Restaurant in Cardiff will keep covered in the refrigerator for up to one week
