wild strawberry lemon curd tartlets

120g unsalted butter

220g caster sugar

3 lemons (juice of 2 zest of all)

3 eggs lightly beaten

300g wild strawberries

icing sugar to dust

for the pastry:

180g plain flour

80g softened butter

80g eater sugar

3 egg yolks

To make the curd filling put the unsalted butter sugar lemon juice and zest into a heatproof bowl over a pan of simmering water (the water should not be in contact with the bowl) and stir the mixture until the butter has melted and the sugar dissolved.

Add the beaten eggs and stir until the mixture thickens enough to form a film on the back of a spoon.
