yogurt and herb dressing
1/2 cup plain yogurt
1 tablespoon lemon juice
1 teaspoon clear honey
1/2 teaspoon dijon mustard
4 tablespoons mixed chopped herbs e.g. parsley chives tarragon mint or oregano
salt and freshly ground black pepper
Beat all the ingredients together with salt and pepper to taste in a small bowl until smooth and well blended.
Low in fat and calories you can vary the flavor of this dressing by adding chopped herbs or gherkins garlic curry paste or finely grated orange zest.. Pour this dressing over a summery salad of smoked chicken chunks of pink grapefruit and orange sliced cucumber and lettuce leaves.
Makes about 1/2 cup
