Oatmeal Pie

This pie is very much like a pecan pie without the nuts.

Ingredients:

2 eggs

3/4 cup white sugar

1 cup butter or margarine, melted

3/4 cup dark corn syrup

3/4 cup 1 minute oats

1 teaspoon vanilla extract

1/4 teaspoon salt

3/4 cup flaked coconut

1 unbaked pie shell

Directions:

In a medium bowl, beat the eggs well. Stir in sugar, butter or margarine,

corn syrup, oatmeal, vanilla, and salt. Pour mixture into the pie shell,

and top with coconut.

Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Cool before

serving.

Makes 1 – 9 inch pie
