Rhubarb Cobbler
My family really loves this recipe. Hope you have good luck with it!
Ingredients:
3/4 to 1 cup white sugar
2 tablespoons cornstarch
4 cups sliced rhubarb
1 tablespoon water
butter or margarine
ground cinnamon
1 cup all-purpose flour
1 tablespoon white sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup butter or margarine
1/4 cup milk
1 beaten egg
Directions:

Mix 3/4 to 1 cup sugar and cornstarch. Stir into 4 cups sliced rhubarb
and 1 tablespoon water. Bring to a boil. Cook and stir for 1 minute.

Pour rhubarb mixture into a greased 13 x 9 inch pan. Dot with butter.
Sprinkle with cinnamon.

Sift together 1 cup flour, 1 tablespoon sugar, baking powder, and salt.
Cut in 1/4 cup butter until it becomes coarse crumbs.

Mix together 1/4 cup milk and 1 beaten egg. Add all at once to dry
ingredients, stirring just to moisten. Drop by tsp on top of hot rhubarb.
Sprinkle with sugar.

Bake for 20 minutes at 400 degrees F (205 degrees C). ENJOY!!
Makes 1 – 13 x 9 inch pan
