Ingredients / Directions
1 16oz can whole kernel corn
undrained
1/3 cup(s) evaporated milk
2 eggs
beaten
1 1/2 cup(s)s all purpose flour
2 teaspoon baking powder
3/4 teaspoon salt
1/8 teaspoon nutmeg
vegetable oil Drain corn
reserving liquid; set corn aside. Add enough corn liquid to milk to equal 1/2 cup(s). Combine milk mixture and eggs; mix well. Combine remaining ingredients except oil; gradually add milk mixture
stirring until smooth. Stir in corn. Heat 1/4 inch deep oil in large skillet (to about 350 degrees F.). Drop in corn mixture by heaping teaspoonfuls; cook only a few at a time
turning once. Fry 3 to 5 minutes or until fritters are golden brown. Drain on paper towels and serve immediately.
