lemon curd

1 large lemon

90g caster sugar

50g butter

1 large egg

Finely grate the lemon and and squeeze the juice.

Place in a pan with sugar and butter and melt stirring occasionally on the simmering plate.

Whisk the egg well in a small bowl. Allow the lemon mixture to come lust to the boil then pour slowly onto the egg whisking constantly.

Return the mixture to the pan and place on the floor at the front of the simmering ovenfor 7 to 10 minutes until lust set.

Stir well and allow to cool and chill before use.

Lemon curd will keep for up to 2 weeks in the refrigerator. You may wish to make double or triple the quantity to serve with bread or toast or to give as a present. Pour the lemon curd into warm clean jam jars while hot then cover cool and chill. Larger quantities will need slightly longer in the simmering oven to thicken so stir well after 10 minutes and return to the oven for 3 to 5 minutes or until set
