500ml water
330g caster sugar
thinly pared zest and juice of 5 lemons
Make a sugar syrup by combining the water and sugar in a saucepan bringing it to the boil and simmering it for fifteen minutes.
Tip all the lemon zest into the syrup.
Bring to the boil then remove from the heat.
Leave the syrup to infuse as it cools.
Add the lemon juice.
Strain the contents through a fine sieve.
Turn in an ice cream machine.
Serves 4
