pea soup with mustard
400g dried green split peas
25g butter
250g smoked bacon chopped
1 onion peeled and chopped
1 litre hot ham (or chicken) stock
2 tbsp Dijon mustard
Soak the peas oveniight then rinse well.
Heat the butter in a large saucepan add the bacon and onion gently fry for about 10 minutes then add the peas hot stock mustard salt and pepper.
Bring to the boil. remove any scum with a slotted spoon then cover and simmer for 45 minutes or until the peas are cooked.
Whiz with a handheld blender (or liquidise in a blender) and check seasoning.
Add another 100mlof boiling water if it is too thick.
Serve piping hot with extra mustard to stir in if you like.
Instead of bacon you can use a smoked gammon hock. Cut off chunks of the meat and add to the soup. You can aIso stir in some grainy mustard just before serving.
