pork vindaloo

45g lean pork shoulder cut into bitesized cubes

275ml water

1 teaspoon salt

1 huped teaspoon cumin seeds

1 heaped teaspoon coriander seeds

5 cm stick coriander

6 black peppercorns

4 cloves

2 green cardamons

2 small dried red chillies

2.5 cm piece of fresh ginger grated

3 cloves garlic crushed

3 tablespoons white wine vinegar

3 tablespoons groundnut oil

2 medium sized onions sliced

Salt and freshly milled black pepper

This is pork cooked in vinegar and roasting spices. If you

dont like things too hot you can omit one of the chillies.

Put the pork in a saucepan with the water and salt then bring to the boil cover and cook gently for about 30 minutes or until the pork is just tender. Skim the froth and remove from the heat.

Meanwhile heat a thick heavy frying pan and add to it the cumin seeds coriander seeds the cinnamon peppercorns cloves cardamoms and dried red chillies.

Hold the pan above the flame and shake it constantly until the spices pop and start to smoke.

Then cool them and after that blend them in a blender with the ginger and garlic and vinegar to make a paste or crush to a paste in a pestle and mortar.

Next in a medium frying pan heat the oil and then fry the onions for about 10 minutes or until golden.

Then pour in the processed spices and vinegar fry for 23 minutes and then pour in the meat and liquid.

Simmer until the meat is tender and the liquid has reduced to a sauce consistency about 30 minutes.

Finally taste and season.

Serve with Spiced pilau rice and chutney.
