succotash salad
2 cups fresh corn kernels (about 4 ears)
2 cups frozen baby lima beans
2 cups peas
buttermilk dressing:
1/2 cup buttermilk
2 tablespoons mayonnaise
1 tablespoon fresh lemon juice
1/4 teaspoon red pepper flakes
3 tablespoon chopped fresh parsley
1/2 cup chopped scallions
salt and freshly ground pepper to taste
Cook corn lima beans and peas in salted boiling water for 3 minutes.
Drain under cold water and cool.
In a small bowl whisk all dressing ingredients together.
In a large bowl combine corn lima beans peas and scallions.
Season with salt and pepper.
Refrigerate until ready to serve.
