sweet and sour bengali lentils

bengali dal

300g split gram lentils (channa dal)

750ml water

1 teaspoon turmeric powder

2 teaspoons sugar

3 tablespoons sunflower oil

2 tablespoons panch phoron

4 dried red chillies deseeded ard crumbled

2 bay leaves

1 teaspoon mango powder

2 teaspoons raisins

salt

Simmer the lentils in the water until soft and mushy.

Add the turmeric salt and sugar.

Blend well.

Heat the oil in a small pan and add the panch phoron.

When it crackles add the red chillies bay leaves mango powder and raisins.

Reduce the heat.

Fry for a minute and pour the oil and the spices over the lentils.

Add water if required to adjust the consistency which should be that of a thick soup.

Bring to the boil once and serve hot.
