If you get a buzz from making ices there is one book you must have: Ices by Robert Weir and Caroline Liddell (Wodder & Stoughton) which tells you all there is to know in meticulous but entertaining detail and has inspirational recipes. I was hard put to choose just one recipe but this is so unusual and delicious that I couldnt resist

10g or 4x50mm sprigs fresh thyme

2 tbspn lemon juice

500 ml sugar syrup (qv)

250 ml each water and dry white wine

Slowly brlng the thyme syrup and water to the boil.

Draw off the heat and add the wine.

Cover and leave to cool.

Chill overnight in the fridge add the lemon juice and strain.

Freeze remembering that it will be slowish going because it contains a fair bit of wine.

Serves 6
