raviloi of mushroom
4 slices boudin (qv)
a little butter
8 x 8cm squares fresh ravioli (qv)
4 teaspoon mushroom duxelles (qv)
2 egg whites lightly mixed
Saute the boudin slices in a little butter until golden.
Place each slice on a square of ravioli.
Top each slice with a teaspoon of mushroom duxelles.
Cover with the remaining ravioli squares and seal together with a little egg wash.
Cook in boiling water for 23 minutes.
This is served as a garnish but would make an equally good starter.
Serves 4
