red pepper coulis

1 onion
5 red peppers cored and deseeded
4 shallot
1 leek white part only
2 celery sticks
100g butter
2 cloves garlic
1 sprig fresh thyme
1 bay leaf
Salt and pepper
caster sugar
570ml tomato juice
Cut all the vegetables into small dice.
Melt the butter in a saucepan. add the vegetables garlic and herbs and cook very slowly until tender.
Season with salt and pepper and a little sugar to taste.
Add the tomato juice and continue to simmer until the peppers start to break down.
Liquidize then pass through fine sieve.
Check the seasoning and add a little water if necessary.
Serves 4
