shiitake mushroom stir fry

vegetarian

2 generous tablespoons vegetable oil

1 x 25mm piece of fresh root ginger cut into fine julienne stnps

2 cloves garlic crushed

4 spring onions cut diagonally into thin slices

6 sticks celery cut diagonally into slices

100g mangetout trimmed and cut diagonally into short diamonds

1/2 red pepper seeded and cut into strips lengthways

150g fresh beansprouts

150g shiitake (or oyster) mushrooms thinly sliced

1 tablespoon soy sauce

1 tablespoon oyster sauce (if available)

Heat the oil in a large nonstick deep frying pan on the boiling plate.

When this oil is really hot put in the ginger and garlic stir well and add the spring onions celery mangetout and red pepper.

Continue stirring for 2 to 3 minutes.

I use two wooden spatulas.

Add the beansprouts and mushrooms the soy sauce and lastly if available the ouster sauce.

Season well.

Serve immediately.

When stirfrying or grilling something on the boiling plate cover the opened lid with a teatowel to protect it from splatters. Then remove as it would scorch when you put the lid down. All the ingredients can be prepared ahead in the morning then stir fried when everyone is ready
