shredded beets and apples on rocket
2 large beets (red or gold or both) roasted and shredded (see below)
2 tart apples peeled cored and shredded 1/2 cup snipped fresh chines
dressing:
2 tablespoons heavy cream
2 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
1 teaspoon honey
1 tablespoon coarsely chopped fresh mint
salt and freshly ground pepper to taste
4 cups rocket
4 fresh mint leaves for garnish
In a medium bowl combine beets apples and chives.
In a small bowl whisk all dressing ingredients together.
Toss two thirds of dressing with beet mixture.
Toss remaining dressing with rocket. On serving plates make a bed of rocket.
Top with beet mixture and garnish with a mint leaf.
roasting beets:
Preheat oven to 425F Wrap each beet in aluminum foil and roast for 45 minutes to 1 hour or until easily pierced with the tip of a knife. Let cool to the touch. Peel while still warm.
Roasting beets in foil helps to retain the sweet earthy flavour that is this salad
