5kg fresh large herring or stromming

Swedish spirit vinegar water

300g salt

400g sugar

10 bay leaves

20g coarsely crushed white peppercorns

20g coarsely crushed allspice

Remove the gills and at the same time the intestines except for the milt and roe.

Cover the fish with vinegar and water; mix 1 part vinegar with 2 parts water.

Refrigerate for 24 hours.

Drain.

Put the fish and the spices in layers in a large jar.

Store the herring for 3 weeks before serving stromming 1 week.
