Appetizer:

Artichoke Torta

1 small red onion — coarsely chopped

1 stick butter

4 8 oz. cans artichoke hearts — drained

3 ounces cream cheese

1 cup shredded Cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup blue cheese — or feta cheese

salt and pepper

8 sheets phyllo dough

1. Saute onion in 2 Tbs. butter until soft. Chop artichoke hearts in small

batches in a food processor just until coarse. In a bowl, mix the eggs, then

add cream cheese, Cheddar, Montererey Jack, and blue cheeses. Stir in onions

and artichoke until just blended, and add salt and pepper to taste.

2. Melt remaining butter and use half to brush 4 sheets of phyllo. Place 2

sheets in the bottom of a square or oval baking dish, then place 2 sheets in

the opposite direction on top of those. Spoon in the artichoke mixture and

bring edges of phyllo around. Butter remaining 4 sheets phyllo and crinkle

top of artichoke mixture to cover.

3. Torta can be frozen at this point until ready to bake. Allow torta to

defrost for a half hour, then bake in a preheated 375
